Hawaii Time

kathy went to a fruit cutting demonstration.  Today they were cutting mango, papaya and pineapple. Do you know which is which? The mango has a large seed so you slice along the seed, peel and slice.  Slicing one direction gives you a smooth taste, slicing the other a crisp taste.  Actually it taste the same, but it feels different in your mouth.  Now to pineapple.  You are not to cut the top off a pineapple; you are to twist it off! The demo was to make little boats by quartering the pineapple.  Then slicing between the outer skin and the meat leaving the core connected.  Then slicing across the top just under the core so that it is like a handle.  Next slice down the meat to make about 10 slices.   Push every other slice out, put toothpicks in every other slice like paddles for rowing and there you have it! The papaya is sliced a few times to get the star center that is saved to garnish the fruit dish.  The rest is peeled and chopped. After the demo we drove into Honolulu and picked u

HI Ko Olina Making a Lei

You start with a long needle that has no real point.  The back has a hook and you tie a string to the point and put a knot on the other end of the string. Then you get lots of flowers; these are common orchids. Next, you take the stems off about 40-50 flowers. Finally you poke your needle through the flowers from front to back filling the entire string. When you run out of flowers with out the stems you  do more and more so the entire string is filled. Finally you take off the needle and tie the string in a knot.  There you have it!  Kathy made it all by herself!

The sun came up and brightened our world here at Ko Olina Beach Resort. Will made us breakfast; and you can see I still taking my meds, but there is less pain and more walking about. We went to the welcome center and got a coupon for a free book and shell lies which we give to each other; So here Will, thanks for taking such good care of me. And here Kathy Hawaiian style; a kiss on both cheeks! Time to enjoy the lagoon.  Did you know that the sands here actually came from Australia?!  Well, they did! All the sand was brought in on ships and dumped here! Will is going to try snorkeling today! First he tested the water: warm, but not bath water. He made it waist deep and then kept going out towards the rocks. And back again! Kathy took a little walkabout. And she made it back too! Now time for Will to head out and snorkel.   That his him; the guy out there flapping his feet! He made it out by the rocks. And checked out how they keep that string around the rocks; it is anchored into the g
